Procedure

Rim glass with syrup and desiccated coconut
Grill/torch/smoke or broil pineapple, cut into chunks if needed.
Combine all ingredients in a blender and blend until smooth.
Pour into desiccated coconut rimmed glass and garnish.

You may use fresh Pineapple when in season.
You may char or smoke the pineapple as much or as little as needed to adjust the smokiness of the drink.
