Recipe tips

Use fresh native tomatoes if available, especially in summer. Deseed them first before using.


Procedure
  1. Using the drained oil from the sardines, saute garlic until slightly browned.
  2. (Optional) Add the tomatoes and cook at low heat for about 5 minutes.
  3. Add the drained sardines, lemon juice and zest. Simmer for 10-15 minutes.
  4. Adjust taste with salt and pepper. Take off heat, and toss in chopped parsley (optional). Toss in cooked spaghetti.
  5. Serve hot with an extra drizzle of olive oil and fresh
