Freeze the filling before placing in dough, for easier dough handling.

Recipe tips
Substitute oyster sauce for hoisin.

Procedure
  1. In a hot sauté pan, add the reserved tuna oil and sauté onion and the garlic.
  2. Add in the drained tuna and cook until the mixture is dry. This can take about 10- 15 minutes.
  3. Add in the hoisin, sugar, soy sauce and star anise then simmer for another 10 minutes. Completely cool before using the filling.
