When pouring your milks, pour as close to the bowl as possible. This prevents aeration of the milk which result in smoother leche flan. Do not mix vigorously, mix gently. Do not skip the sieving steps as this releases air bubbles that have formed while mixing.

Storage tips

Store in chiller for3-5 days. Recipe tips: Keep egg whites frozen for later use.

1. Preheat oven to 350F. Pour the sugar into 2 llaneras then heat the oven to medium flame until it caramelizes. Set aside.
2. In a bowl, mix together the rest of the ingredients. Strain twice, then pour into the llaneras. Cover with aluminum foil. Cook in a bain-marie* for 45 minutes or until firm. *Also called water bath: this is a method of cooking where a pan or container of food is placed in a shallow pan with hot water then placed to bake in an oven or on a stove.
